Recipes Anyone?

I am more than thankful that tonight is the school's Family Night Supper because I'm stuck in a dinner rut.

I NEED HELP!!!!

I've been making chili, chicken soup, stew, tuna casserole and hamburgers over and over and I'm tired of it! I roasted some chickens a little while back and that was a nice change but it's just not enough! Does anyone have any good dinner recipes that are quick and easy? What do you make that your family just can't get enough of? I would really appreciate anything new!!!! (or new to me)

Corned beef and cabbage, beef roast with potatoes and gravy, pork chops, pork country ribs, ham
catfish and fries, baked salmon, boiled shrimp with fries, beefsteak, leg of lamb, ham hocks and beans, lumpia, or maybe some of the frozen stirfry dinners, frozen chicken and beef pies, lasagna, spagetti and meat balls, frozen ravioli with spagetti sauce over it with garlic bread.

Italian beef is always good. My new fav is refried beans. Soak 2 cups pinto beans overnight and then gently simmer them 1-2 hours or in the crock pot all day. Melt 2 Tbs or so butter in a pan then add beans and smoosh with a potato masher adding bean liquid as desired. Just a little salt and you're good to go. I like to serve this with either spanish rice or tortillas and cheese for burritos. Yummy.

How about breakfast for supper? Stew is good. Meatloaf? My kids think I'm a hero when I serve hamburger helper. BBQ chicken is good. Just pour BBQ sauce over chicken pieces and bake in 400^ oven for an hour.(That's what we had for dinner tonight). Baked potato bar- lots of toppings on baked potatoes. Mom's fried rice is good too.

Try burritos, nachos like Taco Bell makes, hamburger pie that has corn, hamburger, cheese and maybe some tomatoe sauce of somekind. Pat at Lemoore used to make that and it was pretty good. Oh, and it had fritos in it. I get in the same rut all the time too. I get to the point of just hating to decide what I am going to fix for dinner. Or, after I fix it, I don't want to eat it because I fused over it so long.

I would love to make lumpia but I can't find the wrappers!!!!! Grrr! And, Italian beef is also one of my staples. Mike mentioned jumbalya (sp?) and I haven't made that in a while, so I think I will. Also, the corned beef idea is a good one. Haven't had that in a while and the kids love it. I used to make a hamburger pie with Bisquick that the kids liked. I bought a new cookbook at the bookfair tonight so hopefully there'll be some fun new things in there. I'm just tired of the same old the same way. Thanks for the ideas.

Oh, I forgot, my kids love "Campfire Stew". They usually make it themselves (with help, of course). It's something that we always take camping. Brown 1 lb ground beef with a small onion (chopped). Drain and add 1 or 2 cans vegetable soup (the kind with alphabets), 1 small can V8 and 1 can undrained corn. Heat through. It doesn't sound that appetizing but it's good. Sometimes we make dumplings on top.

Homemade McRibs!

You have to add just the right amount of dill pickles and sweet onions.

Spaghetti Squash Spaghetti: cut spaghetti squash in half & bake upside down on cookie sheet until tender, scrap out onto plates & cover w/ spaghetti sauce.

Soups:
Potato Leek

Cabbage

Borscht (beet soup topped w/ sour cream, yum!)

Pizza Bread (made from Italian loaf of bread)

I subscribe to Vegetarian Times magazine. I try to shop for & make at least one recipe from it every week. I subscribed so that I would make more healthy veggie dishes. Some are hits & some are misses, even some of the Vegan recipes have been good.

Pizza bread!!! Now why didn't I think of that!?! (one of my Avanti's favorites) I'll have to make some soon!!! I love cabbage soup and I make a mean chili with Boca crumbles.

Do you put chocolate or cocoa powder in your chili? I had some at a party, it was delicious! Once I'm off the diet, I'll have to try it.

Do you have Field Roasts in KS? www.fieldroast.com/
They are great! Grain-based meat alternative, several different flavors. Great on the grill, we use they to make biscuits & gravy, or in chili, etc...
