Pumpkin Recipes

I was at the grocery store today and was intreguied by all of the pumpkin that's around now. I went on The Libby's Pumpkin Site and got what looks to be a good pumpkin/apple recipe and a good pumpkin roll recipe. But I was wondering if there are any other good pumpkin recipes out there. Anyone got one?

I'll have to look. I know I have a good recipe for pumpkin bread. I make mean pumpkin pancakes too. I think I'll take this opportunity to remind everyone that Morton, IL is the pumpkin capital of the world canning 80% of the world's pumpkin. As I drive to Morton, I can still see unharvested pumpkins in the fields.

I was actually thinking of Morton as the pumpkin capital tonight! LOL! I don't know if I'm just being a little homesick or what...I guess that's why I'm doing all of the pumpkin stuff. You'll have to send me your pumpkin pancake recipe!

No recipe for the pancakes. I just add about 1/4 cup pumpkin, about 1/2 tsp cinnamon or pumpkin pie spice and a little sugar to the regular recipe.:) The smell is awesome.

Doesn't everybody add cinnamon anyway? Or am I just strange?

It depends on my mood...I might add cinnamon and vanilla...I might just add almond extract (yummy). It just depends! :)

I add cinnamon to blueberry pancakes or apple but not usually to ones that don't have a fruit added.

Seriously, try adding a little almond extract...it smells just like spritz cookies when they're baking (and tastes a little like it too!)
